ON Thanksgiving we always have to get a large turkey. This year it was 28 pounds. My family like to have the big meal around noon. This used to mean getting up before dawn to get the bird in the oven. No more. Now we spatchcock it, and this one cooked in 2 and a half hours. Everyone said it was the best tasting turkey yet. We always get it fresh from the local farm. (Disclaimer: I am a vegetarian and do not eat meat of any kind. But I do prepare it for the family)
