ON Thanksgiving we always have to get a large turkey. This year it was 28 pounds. My family like to have the big meal around noon. This used to mean getting up before dawn to get the bird in the oven. No more. Now we spatchcock it, and this one cooked in 2 and a half hours. Everyone said it was the best tasting turkey yet. We always get it fresh from the local farm. (Disclaimer: I am a vegetarian and do not eat meat of any kind. But I do prepare it for the family)

Thanksgiving is a great tradition. It's also a big deal that you want to cook for others, even if you're vegan. By the way, that roast looks like it would probably taste to me too

Why don't you let the carnivores take responsibility for themselves? Looks nicely cooked though and what a great word spatchcocked is :)

Mhelene from Villiers-sur-Marne, France told us the tradition and how you cooked it now and that's great because it's a meeting of the family ..but when I read "...get the bird in the oven..." ...that's what staay in mind...!
As in my family you are a great example of sharing in respect of everyone’s tastes and convictions !

I'm sure your generosity is appreciated by your family. Whatever spatchcock is I am glad it saved you time. But think - if you had gotten up at dawn, you would have had extra hours to nibble carrots and celery.

It certainly cooks a lot faster than the traditional way. I will have to try that.
